“Born in Canada, chef Jack Tsai has spent his career travelling and working around the world, doing stages at prestigious restaurants such as Benu in San Francisco and @elevenmadisonpark in New York, and heading the development kitchen at the Michelin-starred @feraatclaridges in London. Tsai has brought it all together in Melbourne to create striking seafood and vegan menus at Pinchy’s Champagne and Lobster Bar, which has just reopened on Bourke Street.”
